Here's our delicious no bake individual sized Coconut Cream Pie recipe made with Complete Whey Protein Powder! These individual sized treats are perfect for a cool summer snack, dessert or breakfast! Our nutrient-dense recipe contains healthy fats and high quality protein which will leave you satiated for hours.
In a food processor, blend these 3 ingredients for crust:
1 cup of pitted dates (about 8-10)
1/2 cup of unsweetened shredded coconut
1/2 cup of raw pecans (if you prefer, substitute walnuts, cashews or almonds)
Press the mix into the bottom of your individual serving dish. The mix should be gooey.
For the Coconut Cream, blend these ingredients:
1 can of Coconut Cream (we used Trader Joe's Organic 13.5 oz can)
1 package of cream cheese
1 cup of unsweetened shredded coconut
2 scoops (approximately 1/2 cup) of Complete Whey Protein in the Creamy Vanilla flavor
3-4 Tablespoons of Maple Syrup or xylitol for extra sweetness
1 teaspoon of vanilla extract
Pour mix over the gooey crust and refrigerate overnight.
If desired, toast some of the shredded coconut for a garnish.
We added homemade whipped cream to the garnish as well.

Whip these 3 ingredients together for delicious homemade whipped cream:
1 cup of Chilled Whipping Cream
3 Tablespoons of Maple Syrup or xylitol for sweetness
1 teaspoon of vanilla extract or almond extract
