We hope everyone had a good Easter weekend. We hope everyone is keeping positive mind sets during this strange time in our history. We also hope everyone is staying healthy by keeping their immune systems in top notch form!
We were gifted with a bag of frozen organically grown strawberries from a family member's garden. Thank you Kerry and Tyson! We made some delicious treats with them!
These little red SUPERFOODS we call strawberries are packed full of antioxidants. They contain more Vitamin C than oranges and also contain manganese, potassium, fiber and folate.
When we prepare a RawWheyProtein.com recipe, we like to make sure that the ingredients used are NUTRIENT-DENSE which means each recipe contains vitamins, minerals, complex carbohydrates, lean protein, and healthy fats.
Strawberry Muffins ingredients:
1/2 cup (1 stick) of butter, softened
1 cup of xylitol (low glycemic sweetener instead of sugar)
2 tsp. of almond extract (substitute vanilla extract if you prefer, but the almond extract gives a wonderful taste)
3 Tbsp. of sour cream
1 1/4 tsp. of aluminum-free baking powder
1/4 tsp. Himalayan sea salt
1 cup of almond flour
1 cup of whole wheat flour
1 cup of chopped frozen strawberries
Mix batter together and spoon into cupcake papers in a muffin tin.
Bake at 350 degrees for 25-30 minutes or until a knife comes out clean from the center of the muffin.
Blend the Frosting ingredients and spoon onto the muffins:
2 (8 oz.) package of cream cheese
juice of 1 lemon
1 cup of strawberries
3 Tbsp. of xylitol for added sweetness
Garnish with a Strawberry
We had a bit of the muffin frosting left over so we decided to make a second treat with strawberries, kiwi, and bananas. Chop your favorite fruit and pour the frosting mix and fruit into popsicle forms. Freeze overnight.
