Lemon Blueberry Keto Cupcakes made with Vanilla Complete Whey Protein!

Always remember that any food cravings can be made with a healthier version in mind! I had a craving for a lemon blueberry cake that my mother would make when I was a kid. We made a smaller portioned version of this cake for a single serving made with almond flour and xylitol for sweetness. We added Creamy Vanilla Whey Protein to the icing which makes this recipe ideal for a quick breakfast or snack full of protein, vitamin C and antioxidants!

What makes this a ketogenic recipe?

This recipe is full of healthy fats and low carbohydrate ingredients. The idea of ketosis is to get most of your energy from high quality fats and protein!

Mix together ingredients for the Keto Cupcake batter:

1 cup of Almond Flour

1/2 cup of Coconut Flour

1 1/2 teaspoons aluminum-free baking powder

1/2 teaspoon of Himalayan Sea Salt

1/2 cup of salted butter melted

6 Tablespoons of xylitol ground in a mortar and pestle to a fine powder (xylitol is a low glycemic substitute for sugar)

2 Tablespoons of Pure Maple Syrup

3 eggs

1 1/2 teaspoons of vanilla extract

the juice and zest of 2 fresh organic lemons

1/2 cup of coconut milk

1 cup of frozen or fresh blueberries

1/2 cup of raw walnuts

Instructions:

1. Mix together all ingredients with a wooden spoon.

2. Place cupcake papers in muffin tins and fill with batter.

3. Bake at 350 degrees for approximately 25 minutes or until tops of cupcakes turn golden brown.

Blend all Ingredients for the Lemon Cream Cheese Protein Icing:

1 package (8 oz.) of cream cheese

1/2 stick of salted butter

2 scoops of Complete Whey Protein in the Creamy Vanilla Flavor

6 Tablespoons of xylitol ground in a mortar and pestle to a fine powder (xylitol is a low glycemic substitute for sugar)

2 Tablespoons of Pure Maple Syrup

1 teaspoon of vanilla extract

the juice and zest of 2 fresh organic lemons

Instructions:

After the Keto Cupcakes have cooled, top with the Lemon protein cream cheese icing. Garnish with fresh blueberries, fresh mint and Lemon zest!

Keto Hot Chocolate made with Complete Paleo Protein in the delicious chocolate flavor!

It's one month into the New Year! We hope everyone's New Year's Resolutions are on track! One of the most comforting things you can do on a cold winter day is to drink a cup of hot chocolate! With this recipe you're getting a serving of high quality protein WITHOUT the big carb load. We have one of the most simple recipes for you to try: Keto Hot Chocolate!

Just blend 1 scoop of Complete Paleo Protein in the delicious Chocolate Flavor into 8 oz. of water and then heat until warm and steamy in a saucepan. That's it!

If desired, add a couple of spoonfuls of heavy whipping cream and a dash of Ceylon Cinnamon on top. We made our whipped cream with 4 Tablespoons of Xylitol and a teaspoon of vanilla extract and then whipped the cream mixture until fluffy.

What makes this a keto recipe? This Keto Hot Chocolate is low carb and high protein! Our Paleo Protein is a beef based protein sweetened with stevia and natural chocolate flavors. Mango Mousse made with Complete Whey Protein in the creamy vanilla flavor and coconut cream!

In the RawWheyProtein.com kitchen, we always strive to create delicious, nutrient-dense recipes that are filled with high quality proteins and are also rich in vitamins and minerals! Afterall, you are what you eat! 

Our recipe of the month is filled with high quality protein and immune system building vitamins such as Vitamin A,C and E along with a whopping 25 different carotenoids found in the Mango fruit!

Health Benefits of Mango include improved digestion, help with diabetes due to it's low glycemic index, improved eye health, clear skin and lower cholesterol. Now that's a SUPER FRUIT! 

All of our recipes are easy to make and packed full of high quality nutrition!

Ingredients for our Mango Mousse:

1- 8 oz. can of Coconut Milk or Cream

2 packets of unflavored Gelatin

2 scoops of Complete Whey Protein in the Creamy Vanilla Flavor

**Substitute Complete Pea Protein for a completely Vegan recipe or

  Complete Paleo Protein for the Paleo recipe version!

2 ripe Mangoes (peeled and cut into cubes)

2 Tbsp. of Xylitol for added sweetness (Xylitol is a low glycemic sugar free substitute made from naturally occurring alcohol found in most plant material)

***If you prefer, substitute your favorite sweetener (maple syrup, stevia)

Instructions:

In a saucepan, heat the coconut cream just enough to dissolve the gelatin packets and xylitol.

Pour the sweet cream mixture into a blender and add the Mango cubes.

Once that mixture is blended, add in the 2 scoops of Complete Whey Protein powder and blend until smooth.

Pour the Mango cream mixture into 4 ramekins. Chill overnight.

We garnished our Mango Mousse with cut Mango, raspberries and mint leaves!

This recipe is great for a healthy breakfast, healthy snack and even a delicious healthy dessert!

A Happy and Healthy Easter to everyone! We are enjoying healthier Easter Egg Candies made with Complete Whey Protein and Complete Pea Protein!

We are always striving to find recipes that not only taste great but also nourish our bodies with healthy ingredients!

We made 2 different types of Easter egg candies, one with a coconut whey protein filling and the other with an almond butter pea protein filling!

Ingredients for the Coconut Whey Protein filling:

2 cups of Shredded unsweetened coconut

2 scoops of Complete Whey Protein in the Creamy Vanilla Flavor

2 Tbsp. of melted coconut oil

2 Tbsp. of xylitol

2 Tbsp. of maple syrup

dash of Himalayan sea salt

Coconut Whey Protein Easter Eggs!

Ingredients for the Almond Butter Pea Protein filling:

1 cup of creamy Raw Almond Butter

2 scoops of Complete Pea Protein in the Creamy Vanilla Flavor

2 Tbsp. of xylitol

dash of of Ceylon Cinnamon

dash of Himalayan sea salt

Instructions:

Blend each recipe together and push into egg tray shapes.

Almond Butter Pea Protein Easter Eggs!

Place in the refrigerator for about 20 minutes. While the eggs chill, melt a package of dark chocolate bits in a saucepan. Mix in a Tablespoon of coconut oil to make a glossy consistency.

Remove the eggs from the molding tray and dunk into the melted chocolate. Let eggs dry on a wire rack and garnish each egg with shredded coconut or almond bits to delineate the egg flavors.
